I don't get it. Why does the displace create this shape?

Well...
- That BG's Width corresponds to the number of frames in the animation (150)
- The Mask on the BG is exactly 1 Pixel wide.
- The BG's R/G/B values are connected to the X/Y/Z position of the (animated) sphere.

Now here comes the trick:
- With the Duplicate I "move" the 1-Pixel Mask by 1 Pixel to the right. With a Time-Offset of 1.
- That gives a gradient image representing the Sphere's Position throughout the animation.
- Now use these RGB values to displace the shape.
"Von hinten durch die Brust ins Auge" but it works...:-)

That's the only part I didn't understand. I thought you could only displace in 'z' so to say.

You missed the point of setting the displace to RGB (vector) instead of a float (like Z or Luma)

He explains it at 03:20

RGB == XYZ

You can do some neat things with image processing too, like if your displacement image was low resolution and you resized it you would get different interpolated values depending on the filter. In extremes, it can make smooth in-out effects. Or you can crop your image to make it travel along the "path". You can also do neat things with sharpening to create ripple effects. Oh, and you can use a color matrix to transform the shape too.
